    • Hi Gerry - we adapt meals where this can be easily done, we try not to adapt menus due to workload in the kitchens but sometimes we will put an 'easy' alternative such as baked potato with suitable filling where needed. We don't require a medical letter but we do ask for GP/medical practice name. We are just about to launch an online application process which we hope will prevent a lot of crossed wires in kitchens. We did a big push on allergen training Nov 19 and now have an online training module for EY staff as I felt that was an accident waiting to happen! During lockdown it was evident when we had many relief cooks going into kitchens and not being able to find the relevant info on special diets that we needed to tighten up our records which cooks are doing now.     • Thanks Jayne - it's the storage space is an issue too regardless of packaging. If more LAs request 4 ltr tubs I think they may be more inclined to provide them without committing to a certain volume. Brid

    • In Highland we didn't get a chance to test the new Middleton reduced sugar mixes before using them for the new regulations. We have had a lot of negative comments from cooks and pupils about them and reduced sales. I think I remember that some folk here had trialled them on kids and had opted to keep the McDougall's mixes although smaller portions as the latter tasted and cooked better. After having analysed some of the McDougall's mixes, the portions sizes are working out at very small to be compliant for sugar in the Secondaries, especially the Brownies. I was wondering what anyone else was finding? Thanks in advance

    • Asymmetric weeks - I'm struggling to get my energy up to the level required in secondaries. I'm putting in the required amount of veg plus soup and can just about manage it but I know as I'm doing it that come the actual analysis this will have to change and this nutrient standard won't be met. How is everyone else managing on asymmetric weeks? Sorry if this has been discussed before.
